I grated the sweet potatoes and then microwaved them for 2 minutes to soften them, then used a potato ricer to remove the excess moisture. The rest of the recipe worked exactly as written, and they were delicious!<\/p>\n<p>We paired them with poached eggs, sauteed spinach, and ham for a delicious brunch.
