I brought it to two dinner parties and people simply could not get enough of it, and obviously, neither could I. This summer has been no exception, with peaches, nectarines, plums, tomatoes, and figs rotating through our kitchen, often with burrata, mozzarella, or feta, and usually with a shower of something salty, crunchy, and green.<\/p>\n<p>I\u2019m just not sure anything this summer has delighted me as much as this, burrata (or fresh mozzarella or feta!) with crushed cherries, pistachios, and fresh mint. It\u2019s a little sweet, a little savory, a little salty, a little tart, a little creamy, and very crunchy and fresh. The colors alone are just joyful. I loved it last week as a pre-dinner snack, and then again as a dessert. I do love a sliced cherry, but the crushing action is great for this for two reasons: one, it helps loosen the pit if it\u2019s still hanging on, and two, it causes the cherries to release some of their juices, making a little sauce for the cheese.
