We\u2019ve always made our peas in the pod the classic way, steamed or boiled, then shocked with cold water if we\u2019re going to chill them or eat them at room temperature, all to preserve that vibrant emerald color. But the pods themselves? Always to the compost. Until now.<\/p>\n<p>I read an anecdote in <a href=\"https:\/\/www.amazon.com\/Vegetable-Butcher-Easy-Steps-Produce\/dp\/1523507001?tag=smikit-20\" target=\"_blank\" rel=\"noopener\">The Vegetable Butcher<\/a> about how the book\u2019s author, Cara Mangini, first encountered this way to cook peas in the pod. Her mother always made them this way and Mangini didn\u2019t realize it wasn\u2019t commonplace until she was much older. She said they taste like \u201csweet and salty candy\u201d and are a gateway drug for vegetable haters and I was <em>immediately<\/em> intrigued. What does one do to make them taste like candy? Why, you blister them in a hot pan, then sprinkle them with lemon and salt.<\/p>\n<p>And then you eat them \u2014 pod and all.<\/p>\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" loading=\"lazy\" width=\"700\" height=\"1050\" src=\"https:\/\/smittenkitchen.com\/wp-content\/uploads\/2024\/05\/blistered-peas-pod-1.jpg\" alt=\"Blistered Peas in the Pod with Lemon and Salt on smittenkitchen.com\" class=\"wp-image-38977\" srcset=\"https:\/\/smittenkitchen.com\/wp-content\/uploads\/2024\/05\/blistered-peas-pod-1.jpg 700w, https:\/\/smittenkitchen.com\/wp-content\/uploads\/2024\/05\/blistered-peas-pod-1-300x450.jpg 300w, https:\/\/smittenkitchen.com\/wp-content\/uploads\/2024\/05\/blistered-peas-pod-1-683x1024.jpg 683w\" sizes=\"auto, (max-width: 700px) 100vw, 700px\" \/><\/figure>\n<p>I was admittedly a little nervous the first time I made these. I\u2019d grown up with the idea that pea pods were a shell, not something to be eaten unless you were talking about their cousin, the snap pea. But these? These are just peas in the pod that we\u2019re cooking briefly in a hot pan, allowing them to char in spots, then seasoning them to the hilt with bright, tangy lemon and flaky salt. They stay tender and sweet inside, a contrast to the smoky, salty, tangy pods outside and yes, the pods become so tender, you don\u2019t even notice them. It truly is like eating little, sweet, salty, savory, tangy pea candies.<\/p>\n<p>I think this technique is probably best with sugar snap peas, or at least smaller pods. The ones I got from the store were on the medium-to-large side and the fibrous string needed to be removed first, which is easy to do (just snap the top stem part off and pull the string down the seam of the pea). If you have thinner ones, you might not even need to do that.<\/p>\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" loading=\"lazy\" width=\"700\" height=\"467\" src=\"https:\/\/smittenkitchen.com\/wp-content\/uploads\/2024\/05\/blistered-peas-pod-2.jpg\" alt=\"Blistered Peas in the Pod with Lemon and Salt on smittenkitchen.com\" class=\"wp-image-38978\" srcset=\"https:\/\/smittenkitchen.com\/wp-content\/uploads\/2024\/05\/blistered-peas-pod-2.jpg 700w, https:\/\/smittenkitchen.com\/wp-content\/uploads\/2024\/05\/blistered-peas-pod-2-300x200.jpg 300w\" sizes=\"auto, (max-width: 700px) 100vw, 700px\" \/><\/figure>\n<p>I\u2019ve made them a couple times a week since first trying them. They\u2019re a perfect little side for so many things and I think I\u2019ll make a big batch to go with fish for dinner tonight. We\u2019ll see! Anyway, if you too haven\u2019t heard of this magic trick, I hope you\u2019ll give it a try. It\u2019s summer, the peas are here, and this is an excellent way to eat them.<\/p>\n<div class=\"wprm-recipe-container wprm-block-text-normal\">\n<div id=\"wprm-recipe-38973\" class=\"wprm-recipe-template-modern\">\n<div class=\"wprm-recipe-header\">\n<h2 class=\"wprm-recipe-name\">Blistered Peas in the Pod with Lemon and Salt<\/h2>\n<\/p><\/div>\n<div class=\"wprm-recipe-details-container\">\n<ul class=\"wprm-recipe-details\">\n<li class=\"wprm-recipe-details-servings\">\n                            <strong><span class=\"wprm-recipe-details-label wprm-recipe-details-servings-label\">Yield<\/span>:<\/strong> <span class=\"wprm-recipe-details-servings-value\">2 to 4 side servings<\/span>\n                        <\/li>\n<li class=\"wprm-recipe-details-prep_time\">\n                            <strong><span class=\"wprm-recipe-details-label wprm-recipe-details-prep_time-label\">Prep time<\/span>:<\/strong> <span class=\"wprm-recipe-details-prep_time-value\">5 minutes<\/span>\n                        <\/li>\n<li class=\"wprm-recipe-details-cook_time\">\n                            <strong><span class=\"wprm-recipe-details-label wprm-recipe-details-cook_time-label\">Cook time<\/span>:<\/strong> <span class=\"wprm-recipe-details-cook_time-value\">5 minutes<\/span>\n                        <\/li>\n<\/ul><\/div>\n<div class=\"wprm-recipe-ingredients-container\">\n<h3 class=\"wprm-recipe-header\">Ingredients<\/h3>\n<div class=\"wprm-recipe-ingredient-group wprm-recipe-ingredient-group-1\">\n<ul>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">1<\/span> <span class=\"wprm-recipe-ingredient-unit\">pound<\/span> <span class=\"wprm-recipe-ingredient-name\">peas in the pod (sugar snap peas would work beautifully here, too)<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">1<\/span> <span class=\"wprm-recipe-ingredient-unit\">tablespoon<\/span> <span class=\"wprm-recipe-ingredient-name\">neutral oil (grapeseed, canola, sunflower, etc.)<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">2<\/span> <span class=\"wprm-recipe-ingredient-unit\">teaspoons<\/span> <span class=\"wprm-recipe-ingredient-name\">lemon juice<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-name\">Flaky sea salt<\/span>, <span class=\"wprm-recipe-ingredient-notes\">to taste<\/span><\/li>\n<\/ul><\/div>\n<\/p><\/div>\n<div class=\"wprm-recipe-instructions-container\">\n<h3 class=\"wprm-recipe-header\">Instructions<\/h3>\n<div class=\"wprm-recipe-instruction-group wprm-recipe-instruction-group-1\">\n<ol>\n<li class=\"wprm-recipe-instruction\"><span class=\"wprm-recipe-instruction-text\">If your pea pods have a fibrous string (some thicker ones do), snap off the top stem end and pull the string down the seam of the pea. Discard string.<\/span><\/li>\n<li class=\"wprm-recipe-instruction\"><span class=\"wprm-recipe-instruction-text\">Heat a large (10 to 12-inch) skillet over medium-high heat for 2 minutes. Add oil, swirl to coat the bottom, then add pea pods. Cook, undisturbed for 2 to 3 minutes, or until the pods have blistered and charred in spots. Stir and cook for 2 more minutes, until the other side has blistered slightly as well.<\/span><\/li>\n<li class=\"wprm-recipe-instruction\"><span class=\"wprm-recipe-instruction-text\">Remove from heat. Transfer peas to a serving dish and drizzle with lemon juice and a generous sprinkle of flaky sea salt.
