Deb, I need you to know that I’ve made this so many times this summer and I’m obsessed with everything about it. I brought it to two dinner parties and people simply could not get enough of it, and obviously, neither could I. I feel like you know this about me already, but if you put a cheese on a plate — even a naked one — and then shower it with something seasonal, salty, crunchy, herbal, spicy, or sweet-and-sour, I am going to be absolutely here for it. This summer has been no exception, with peaches, nectarines, plums, tomatoes, and figs rotating through our kitchen, often with burrata, mozzarella, or feta, and usually with a shower of something salty, crunchy, and green.

I’m just not sure anything this summer has delighted me as much as this, burrata (or fresh mozzarella or feta!) with crushed cherries, pistachios, and fresh mint. It’s a little sweet, a little savory, a little salty, a little tart, a little creamy, and very crunchy and fresh. The colors alone are just joyful. I loved it last week as a pre-dinner snack, and then again as a dessert. Either way, it was entirely devoured.

Why crushed and not sliced cherries? I do love a sliced cherry, but the crushing action is great for this for two reasons: one, it helps loosen the pit if it’s still hanging on, and two, it causes the cherries to release some of their juices, making a little sauce for the cheese. This is a very good thing.

Burrata With Crushed Cherries And Pistachios


Total Time: 10 minutes

Ingredients

  • 1 cup cherries (pitted and roughly crushed with a fork)
  • 1 tablespoon honey (or maple syrup)
  • ½ teaspoon red wine vinegar
  • teaspoon black pepper
  • 1 large ball burrata (or fresh mozzarella or feta)
  • 2 tablespoons pistachios (toasted and roughly chopped)
  • 1 tablespoon fresh mint (roughly chopped)
  • pinch flakey sea salt

Instructions

In a small bowl, combine the cherries, honey, vinegar, and pepper.
Place the burrata on a shallow serving plate. Spoon the cherry mixture over and around the cheese. Sprinkle with pistachios, mint, and sea salt. Serve immediately.

Notes

Do ahead: You can prep the cherry mixture a few hours in advance, but it is best to assemble this right before serving. However, leftovers are great the next day too, just not quite as pretty.
