I made this for dinner tonight- our kids are at sleepaway camp for the rest of the summer and this dish was 10/10 for “Refreshing and indulgent summer soiree dinner for people who currently have no kids and want to feel fancy.” We ate it with a $6 bottle of Lambrusco from Trader Joe’s.
