Baking Tins for Cupcakes

I had a question recently about the type of cake tin that I use. These are 2 of them. They are both metal with a non stick surface so I can put in cupcake cases or use without after greasing lightly the cupcake tins.

Cupcake Colours

I found these recently, they are food colours by Wilton in 8 shades which can be mixed together to create lots of individual shades. I found that they are quite strong and that dipping a wooden cocktail stick into the colour is a good way of controlling how much is needed for the right colour.
I expect they are also good for painting onto cakes like water colours. That is the real reason I bought them so I can customise the colours of my cupcakes.

Prune Cupcakes with Lemon

This is the zester I bought recently. It is easy to use to make those thin strips of lemon, orange and lime zest.
These are Prune and Banana cupcakes recipe(see labels on the left) topped off with lemon butter cream. I use half butter to half icing sugar, creamed together and some lemon zest and a drop of lemon juice added. I spread on top of the cupcakes and add a prune. It is a tasty combination. The prunes are the ready to eat type with no stones

Baking Equipment

These flexible baking trays seem to be the new thing in the UK. I have bought one to make upside down cupcake recipes and one in readiness for Valentines Day . This heart shaped one could also be used for anniversary occasions. I am going to get the cupcake case ones and those with feet look good fun.
These individual tins are to do summer pudding cupcake recipes or ones that require jelly to set. I am sure I will find lots of uses. Have you got any favourite items for use in baking? It would be great to share tips and ideas for good baking.

Baking Equipment

These cup measures are great for doing recipes which require these and I use these to convert my own recipes to cups. I found these in Tesco. They also have good cutters with letters and numbers for decorating cupcakes. These are good for converting recipes to USA amounts. I also found some this week which have all the spoon measures on the handle.

HAPPY NEW YEAR CUPCAKES RECIPES

A present for Christmas was a new food mixer by Dualit . It has got some useful attachments and is ideal for lots of cupcakes recipes. The photograph shows it in action on my first cupcakes of the new year 2007. I like to do things by hand but this does make things quicker.

This is a selection of the different types of cupcake cases that are available for different occasions and different cupcake recipes. The small foil cupcake cases can be used for mini-cupcakes. The white cupcake case is for the small fairy cake size and the larger cupcake case can be used for muffins and the larger cupcakes. It means that the case will take twice as much mixture or batter so I have doubled the recipe mixture. The cupcakes have more depth and will allow more opportunity for fillings and decoration.

I decided to make my first cupcakes to celebrate the new year. The recipe is as follows;
Ingredients
2 cups--8oz self-raising flour
1 cup--8oz butter or margarine
1 cup--8oz castor sugar (fine ground)
4 eggs
1 lemon--grate off the rind and squeeze out the juice
1 tablespoon of milk
16 large cupcake or muffin cases

Method
Cream the sugar and butter-margarine together. Add the eggs one at a time and beat well. Add the grated lemon rind, lemon juice and milk. Add the flour and beat gently. Divide the mixture into 16 cupcake cases, They must be the large ones. This mixture would make 32 cupcakes in the small fairy cake cases. Cook at gas 5, 190C or 375F for 20 minutes. Do not open the oven whilst they cook as they will not rise.
Decorate in the style of your choice.



These cupcakes are double the depth and allow for bigger decoration. I am going to use this size this year to create cupcake recipes with delicious fruit fillings and creams. These are tasty Lemon Cupcakes and I have decorated them to say Happy New Year 2007 to everyone who has been to my sites and also for my family to enjoy.

The cupcakes have been decorated with icing on the base , small sweets to show the words and then they are defined with writing icing tubes.

BAKING EQUIPMENT


The equipment you need to make the easy recipe cupcakes is as follows;

  • A good space to work where you can spread out all the ingredients and items
  • A large mixing bowl
  • A wooden spoon
  • Weighing scales
  • Paper cases
  • A tablespoon
  • A knife
  • A baking tray
  • A cooling wire rack--you can use the wire rack from a grill pan
  • A sieve
  • Cloth or paper towels to keep the work surface clean

You can also use a food mixer to speed things up if you are going to make lots of cupcakes.

A visit to a kitchen store will provide you with all types of options on the basic list. I like to use non-stick baking trays. I like items that are dishwasher safe. You may want the items to co-ordinate with the look of your kitchen. Whatever your choice, enjoy making those Crazy Cupcakes.

As you progress and start to experiment with cupcake variations and decoration you will start collecting new items such as icing nozzles and bag, a rolling pin, flour dredger and decorative crazy cupcake holders.
