

These were the first cupcakes ever made by
Bellafleur from Brazil, following my chocolate cupcake recipe. Wow they look good and I love the pastel colours of the icing. Bellafleur said she had a problem with cupcakes rising fully . In my experience cupcakes do not rise fully for a variety of reasons,
1. Not enough baking powder in the mixture
2. Over beating the eggs
3. When in the oven the position is too low or the temperature a little bit too cool.
I find that you have to bake a recipe a few times to get in right according to my own oven. So I would make them again and make a few changes. I find that if cupcakes are high in the oven they tend to rise in more of a classic dome shape. Can anyone else offer advice on this problem?
Bellafleur also wanted alternatives to butter cream topping. Does anyone have any alternatives they have tried?
I like to use fresh cream flavoured with a teaspoon of brandy, fresh vanilla, whisky, a fruit liqueur and fruit curds( see the link to CHUTNEY SIT top left) where I post how to make lemon, lime and orange curds. Also plain icing with icing sugar and lots of sweet delights on the top. Yogurt is a good healthy alternative.
