Raspberry and Blackberry Cupcakes

These are the moors in Lancashire in Spring, this is Parlick hill. In Autumn it is covered with heather flowers which are a beautiful shade of purple. It is a pity the flowers do not last longer but they do fade to good shade of purple as Autumn progresses.

I made some Raspberry and Blackberry Cupcakes using more seasonal berries. This time raspberries and blackberries as you can see in the photo.
The cupcakes had butter cream on made from icing sugar and unsalted butter, I also added some honey. The type of honey that is clear and the bees made it on heather. It is called heather honey with a very distinctive flavour. I also added some honey to the cupcake batter when I was making it to give it that distinctive flavour. I found these makes of heather honey available in USA
This is the link to see MIEL HEATHER HONEY

This is the link for the one called WILD HEATHER HONEY

This link for this one called HEATHER FLOWER HONEY

Has anyone used honey in cupcake recipes and what types do you find are really good for adding flavour to cupcake recipes?

Thanks for reading and check out the list on the left for nearly 2 years of cupcake ideas.

BLACKBERRY YOGHURT CUPCAKE RECIPE

This is one of my healthy eating crazy cupcakes . When we all want to enjoy cakes but try to stick to a healthy diet and add in those 3 portions of fruit per day, this is one way to do it.

Ingredients

Natural yoghurt
fresh blackberries

1. Make the cupcakes in the usual way. Let the crazy cupcakes cool down on the baking tray. Then remove the top section with a sharp knife do this with an action that points towards the centre of the cupcake so that you cut out a cone shape. Put this on one side. If you are going to do all your cupcakes then it saves time to remove all the cones together. Arrange the cupcakes in rows .

2. Wash and dry the blackberries, leave enough whole blackberries to go on the top of each cup cake and slice the other fruit so you have 4 slices for each cupcake

3. Use a spoon to fill the centre of each cup cake with yoghurt

4. Now arrange 4 of blackberry slices on the cupcake

5. Replace the sponge cone

6. Put a small amount of yoghurt on the cupcake

7. Top off each cupcake with a blackberry

ENJOY
