Chocolate Upsidedown Cupcakes

These cupcakes use the Chocolate Cupcake Recipe . I tried out this new baking tray which is made of that wobbly silicone but is very effective as long as you put the silicone onto a baking tray in the oven.
Method
I greased the silicone tray.
I put chocolate cupcake mixture into the spaces, just about one third full.
I then put in some chopped prunes.
I then covered with more chocolate cupcake mixture, so the cases where 2/3--two thirds full, leaving room for expansion.
I baked in the top section of the oven at gas 4--175C--350F for about 20 minutes.
Do not open early or else they will sink


This shows the lightly greased silicone cases.They have been filled with the mixture and chopped stoned prunes


The cupcakes then have more chocolate batter mixture over the prunes

These are the cooked chocolate and prune cupcakes. Let the cupcakes cool and then turn out and keep upside down.
Below this is how I serve these cupcakes as a very attractive sweet. I topped off the cupcake with some stewed cherry puree, a fresh cherry and to accompany this some fresh pineapple and some vanilla ice cream.
You could serve with hot chocolate sauce, grated dark chocolate, dust with cocoa and icing sugar,add chocolate ice cream and fresh fruit of your choice.
