These cupcakes use the
Chocolate Cupcake Recipe. I then filled them with
Pineapple butter cream. I made this butter cream by creaming together butter and icing(confectioners) sugar in equal proportions. I then added fresh pineapple chopped very finely. This could also be pureed in a blender. I would use 1 cupful of pineapple with the butter cream for a batch of 12 to 15 cupcakes. I cut the top off the cupcakes and put the pineapple butter cream into each cupcake. I put on the cupcake lid and put 1 teaspoon of butter cream on the top of each cupcake. I put some slices of fresh pineapple fruit on to the cupcakes and added some chocolate sprinkles. These sprinkles have some caramel inside. A delicious combination of flavours to please any taste buds.
I think these would be a good cupcake to serve at Christmas as and alternative to a fruit Christmas cake. To make them a little more special add a teaspoon of
dry sherry onto the sponge before putting the pineapple butter cream into the cupcakes or
dark rum would be nice
