Christmas Cupcakes





A few simple easy ideas to decorate cupcakes for Christmas. Cover each cupcake with butter cream or icing.
Put some dessicated coconut on a plate. Dip each cupcake into the coconut do this by holding each one upside down.
Add decorations, sprinkles , candied fruit and candles to light.

Christmas Cupcakes

This is an idea for Christmas cupcakes that I have got from seeing traditional Christmas cakes in the UK.
Make your favourite cupcakes. I suggest Vanilla cupcakes with some added spices such as ground cloves.
Let the cupcake cool.
Method 1
Spread apricot jam on the top of the cupcakes.
Place a selection of fruit and nuts onto the top of each cupcake such as walnuts, glace cherries in different colours, almonds, stem ginger,soft pieces of dates and prunes and cashews.
Drizzle warm apricot jam over the fruits and nuts to create a shiny glaze.
Serve
Method 2
Buy ready made marzipan or make your own.
Roll out and cut out a piece to fit the top of each cupcake.
Spread apricot jam on the top of each cupcake.
Place a circle of marzipan on the top of each cupcake.
Spread apricot jam on the top of the marzipan.
Place a selection of fruit and nuts on to the top of each cupcake.
Drizzle warm apricot jam onto the fruit and nuts to glaze.
Serve.
Method 3
Make butter cream by mixing together unsalted butter, icing sugar 1/2 and 1/2. Add some brandy to the butter cream.
Spread the butter cream onto each cupcake.
Add fruit and nuts and glaze with warm apricot jam.
Serve
I am sure these would be delicious cupcakes

Christmas or Summer Pudding Cupcakes

Well its good to be back. I've been on holiday for a few weeks and got lots of new ideas for decorating cupcakes. I've also got some pictures of the what may be the most isolated Southerly cupcake in the world but that will follow soon when I get my pictures and ideas organised. I thought this was a good cupcake for the festive season and a change. I suppose it is stretching the definition of cupcakes but I like these.

These are the summer pudding cupcakes that are superb when these fruits are in season. These can also be made to serve over Christmas as an alternative to a heavy Christmas traditional pudding. I would use fresh fruit if I can get it or use frozen fruits of the forest. In the UK we can still get strawberries at this time of the year and some berry fruits. If you live in the Southern hemisphere I expect you have some good summer fruits available for Christmas.
Ingredients
Fruit
Allow 1/2 to 3/4 cup of fruit for each individual cupcakes. The fruit should be from strawberry, red currant, black currant, raspberry, blue berry, blackberry. The fruit needs to be fresh and firm. Clean and remove any stalks and bad bits. Wash.
Put the fruit into a pan with 1-2 teaspoon of granulated sugar for each 1/2 to 3/4 cup of fruit. May be more fruit depending on the size of your containers.
Heat the pan quickly until the juices start to come from the fruit. Remove from the heat. This can just be 1 minute or depending on the quantity of fruit. Put on one side to cool.
Keep a spoon of juice on one side for each cupcake when it is served.
You can also use frozen fruits of the forest for these.
Cupcake Preparation
1. I line each individual cupcake container with cling film

2. I take an unsliced loaf of fresh white bread that is firm rather then very soft. I remove all the crusts and slice the bread. See below for the thickness.
3. I then line each individual cupcake case with bread.

4. I then spoon in the fruit into the container and top off with more sliced bread.

5. Wrap the cling film over the bread.
6. Put into the fridge over night with a weight on top to press the cupcake together.
7. The following day turn out onto a serving plate and drizzle over some juice you kept on one side.
8. Top off with a piece of fresh mint or a piece of fruit or a sprig of holly if it is for Christmas.
9. Serve with fresh cream or ice cream .

CHRISTMAS CUPCAKES RECIPES

Christmas mincemeat cupcakes recipe. In England one of our traditional foods at Christmas is a mince tart. This is a small pastry pie filled with sweet mincemeat. I thought I would create a recipe for a Christmas mincemeat cupcake.
Ingredients
Recipe 1.

4 oz self raising flour
4 oz butter
4 oz castor sugar
2 medium eggs
2 tablespoons milk or sherry

2 oz sweet mincemeat
Recipe 2.
110 gm self raising flour
110 gm butter
110 gm sugar
2 medium eggs
2 tablespoons of milk or sherry
55gm sweet mincemeat
Recipe 3.
1 cup self raising flour
1/2 cup butter or margarine
1/2 cup sugar
2 large eggs ,
2 tablespoons of milk or sherry
1/4 cup sweet mincemeat
Method for all Recipes
1. Get all your equipment out, mixing bowl, wooden spoon, paper cases, tablespoon, knife, baking tray, cooling wire rack, scales, sieve and set these out on the work surface. Place the paper cases into the baking tray.
2. Get all the ingredients out.
3. Weigh out the sugar and place in the bowl.
4. Weigh out the butter or margarine and place in the bowl.
5. Weigh out the flour.
6. Using a wooden spoon mix and beat the sugar and butter/margarine together until they are absolutely smooth, this can take up to 2 minutes depending on how soft the butter or margarine is if you do it by hand or quicker with a mixer. The mixture will turn pale and fluffy.
7. Break one egg and add it to the mixture, beat it in until it has blended with the mixture. Repeat with the second egg. Add the milk or sherry and blend.
8. Use the sieve to add the flour to the mixture as this will add extra air to the mixture. Gently fold in the flour or mix in slowly with an electric mixer. The mixture should be a nice type of dropping consistency.
9. Using a spoon divide the mixture into the paper cases and just half fill the cases, filling about 12 paper cases. Using a teaspoon place a teaspoon of mince meat in the centre of each cupcake. Then with the remaining mixture-batter cover the mincemeat so it is trapped in the centre.
10. Switch on the oven temperature 375F, 190C and gas 5. Let the oven get warm. You can put the oven on when you start so it is already warm. Place the tray of cupcakes on a shelf in the centre. They will take 12 to 18 minutes. When the cakes are firm and springy to the touch and they look well risen and golden they will be cooked.
11. Remove from the oven and place on the wire try to cool. Cover with a dusting of icing sugar. They are good eaten warm.
ENJOY

The Christmas mincemeat cupcakes ready to come out of the oven.
Christmas orange chocolate cupcakes for friends to enjoy. I made these cupcakes to take to some friends. The mixture was the chocolate cupcake recipe with grated orange rind added and orange juice. To decorate them I made some orange butter cream-frosting.

Ingredients 50gm--2oz butter or margarine, 125gm--4oz of icing sugar and 1 teaspoon of orange juice. If you need more double the quantity.

Method Mix the butter and icing sugar together. It is quicker with an electric mixer. Add the orange juice. Pipe or spread onto the chocolate cupcakes. Add chocolate sprinkles, fresh satsumas, oranges and chocolate drops. Serve and enjoy.

REINDEER CHRISTMAS CUPCAKES

These pictures show some art created in Lapland. I collected these on a visit to Finland. I like the black drawings which show reindeer, people and the environment. I decided to use these for a cupcakes design.
I iced the cupcakes white. I then took a small painting brush and painted the cupcakes using food colouring. I put a small amount of red, blue, yellow and black on a plate. I had water to dilute the colour and rinse the brush.

The colours remind me of watercolour paintings. They look like planets and landscapes.
When the colours had gone dry I used black writing icing to draw the images from the pictures onto the cupcakes. I think these are interesting and a new way of showing the Christmas Lapland reindeers and their environment.

CHRISTMAS SHOP CUPCAKES

CHRISTMAS SHOP CUPCAKES
This Christmas display was seen in Southport, U.K. I thought they looked really good and would give me ideas for my own cupcakes. I like the tree designs on the display as well. It is a great idea to always have a camera to get some photos to help you develop ways to decorate cupcakes. The icing methods are always good to look at and copy or just get ideas on how to decorate cupcakes.
